I apologise for the lack of blogging, but I’ve had a couple
of really busy days.
Despite the madness, I did have a chance to whip up a batch
of delicious Banana Nut Muffins. The recipe is from A Sweet Pea Chef, and it’s
super easy, and fast—perfect for those days where you want something sweet, but
can’t muster up the energy-nor do you have the time-to go crazy in the kitchen.
Of course, if you are
not in the mood for muffins, or don’t have a muffin tin, you can always try making my Banana Bread. Whatever tickles your fancy.
Makes 12 small muffins
Supplies
Measuring Cups
Hand Mixer or Wooden Spoon
1 lg Bowl
Muffin Tin
Cupcake Liners
Ingredients
4 Ripe Bananas, Mashed
⅓ cup Melted Butter
¾ cup Sugar
1 Egg, beaten
1 tsp Vanilla Extract
1 tsp Baking Soda
⅛ tsp Salt
1½ cups Flour
1 cup Walnuts (chopped)
Method
- Preheat oven to 180C/350F, and line your muffin tin with cupcake liners (or spray your tin with cooking spray)
- In a large mixing bowl, mix the Butter into the Mashed Bananas. Then add Sugar, Egg, and Vanilla. Mix. Finally, add Flour, Baking Soda, and Salt. Fold in the chopped walnuts
- Pour mixture into your muffin tin and bake for 25-30 minutes—or when your toothpick comes out clean
- Remove from the oven and cool

Remove muffins from tin and place on cooling rack |
That's it! Really simple. And they can even serve as breakfast on the go-if you do that sort of thing.
