Double Chocolate soft & chewy Cookies

Our second stop on our chocolate journey: Double Chocolate Soft & Chewy Cookies

I actually made these last week, but between Halloween and cupcake baking I didn't have time to put the blog up. 

Anyway, these cookies were delicious-so rich and soft and fudgy-and the whole batch was eaten in one night. 

Like I've said before, if you are going to bake with chocolate, best make it as decadent as possible!

Double Chocolate Soft & Chewy Cookies
Makes about 12 large cookies

Tools
Large bowl
Hand Mixer
Baking Trays
Wax Paper

Ingredients
10 tbsp Unsalted Butter, softened (1 stick plus 2 tablespoons)
¾ cup Brown Sugar, packed
¼ cup Sugar
1 large Egg
1½ tsp Vanilla
1 cup Flour, spooned and levelled
⅔ cup Unsweetened Cocoa Powder
½ tsp Baking Soda
¼ tsp Salt
1¼ cups Chocolate Chips, semi-sweet or dark

Method
1. Line your baking trays with wax paper
2. In a large bowl, cream Butter and Sugars. Then add the Egg and Vanilla and continue mixing until combined. Slowly add the Flour, Cocoa, Baking Soda and Salt. Mix until everything is incorporated. Lastly, stir in the chocolate chips

3. Form the dough into balls (as big or as small as you want your cookies to be) and place 2 inches apart on your baking tins. Cling film your trays and chill in the refrigerator for at least 2 hours
4. When ready to bake, preheat your oven to 180C/350F. Bake cookies for 10-12 minutes until the tops are just set. Remove from oven and let cool on their tray for 5 minutes before transferring to a wire rack to continue cooling
