If there is a list of things I miss from NY the most, a good
pound cake is on it (Entenmann's pound cake, I’m thinking of you). You just can’t
get a moist/dense/fully flavoured pound cake here, and it's really depressing—for me at least. So I took it upon myself to make my own very yummy pound cake.
As you might have
already guessed, I’m not a big chocolate fan. That’s not to say I don’t like
chocolate at all, but I do prefer vanilla/spiced/fruit flavoured treats instead.
And although I could have made a simple vanilla pound cake, I really craved a
marble cake of some sort. With chocolate out of the question, and the molasses jar
in my cupboard beckoning, I decided to make a Molasses Pound Cake.
