Easy Banana Nut Muffins

I had two really brown bananas sitting in my fridge that were begging to be transformed. Although I almost always make banana bread out of my ripe bananas—check out my Banana Bread recipe if you haven’t so already—I didn't quite have enough to bake a loaf.

Since I love muffins, and had some finely chopped walnuts sitting in my fridge (from making the Melomakarona), I went for Banana Nut Muffins.

Although I do have an old recipe for Banana Nut Muffins, I prefer these because they capture the essence of Banana Bread the mostnot that they aren't both really tasty.

Banana Nut Muffins
Makes 12 muffins

Ingredients
2 large Eggs
125 ml Vegetable Oil
200g (1cup) Brown Sugar
1/2 tsp Vanilla Essence
2 Bananas, mashed
250g (2 cups) Flour
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
1 tsp Cinnamon
100 g Walnuts, finely chopped

Method
1. Preheat the oven to 180C/365F, and line your tray with muffin cases.
2. Combine eggs, vegetable oil, sugar, and vanilla together in a large bowl and mix. Stir in the mashed banana.
3. In another bowl, combine and sift together the flour, baking powder, baking soda, salt and cinnamon.
4. Combine the wet and dry ingredients and stir with a spoon, being careful not to overmix. Gently fold in the nuts.

6. Spoon batter into the prepared muffin tin and bake for 20-25 minutes, toothpick comes out clean. Leave in tin for 5 minutes, and then remove and place on wire rack to finish cooling.

Although I like to eat these muffins as is, at the request of my friends, I also whipped up some Vanilla Buttercream to top them off. I have the recipe for that HERE

  2. These are delicious!! I made some for a friend who just had a baby, and next time I'll be making them for myself, with gf flour :) I'm sure they'll freeze beautifully, as well.

    1. Thank you so much for your kind words! For some reason I never thought about freezing them, but that's a good idea. Will have to try it next time-if I don't eat all of them first :)
