Lemon Drizzle Poundcake

Yum
What does one do when they are in excess of lemons? Bake a lemon inspired cake of course! And since loaf cakes are the easiest cakes to bake (prep and baking took less than an hour), I settled for a Lemon Drizzle Poundcake.

If you've been reading my blog from the beginning, you may already know that poundcakes are my favourite! So if you haven't already, check out some of my past recipes: Banana Poundcake, Orange Poundcake, or even this delicious Pumpkin Spice Loaf.

So, if you are in the mood for a moist, lemony, not too dense cake with a tangy/sweet icing, this is the recipe for you.

Pumpkin Spice Loaf

Yum

I started my blog last year of this month. Can you believe it?! It has been 1 WHOLE YEAR!!! And yet, so much has changed in my life—I moved back to NY from Durham (after living there for 5 years), I finished my PhD, I made many new friends and lost some old friends…but I digress.

I thought it would be fitting to begin this new chapter of my life/and the blog’s second year, with a spin on my very first entry. So, for today’s recipe, as a play on last year’s Pumpkin Pie, I have made a Pumpkin Spice Loaf.

Hope you enjoy.

I made this poundcake over month ago but never had a chance to post about it. Mainly because it was eaten that same day, and as a result, I completely forgot about it. oops

Anyway...
Moist and fluffy poundcake? ü
Creamy and chocolaty goodness? ü
Really easy to make? ü

Nutella lovers prepare yourselves for an amazing treat.

Cream Cheese Poundcake + Strawberry Coulis

Yum
I don't know about you guys, but as you can tell from my blogs, I'm always up for a good poundcake. I’ve been wanting to try this recipe from Smitten Kitchen for a while now, so today was that lucky day.

Now, I will warn you, if you were looking for a low fat dessert, this is definitely NOT the recipe for you. Between the cream cheese, and the butter…let’s just say a slice is probably around 1000 calories. But who’s counting? I mean, if you are going to make a cake, might as well enjoy a piece without feeling guilty. And anyway, that’s what friends are for—sharing the calories-erm, I mean, deliciousness!

On to the actual baking…

Lemon Drizzle Poundcake

Yum

Remember my Molasses Poundcake? and my Banana Bread? Well this recipe is just as easy (+ 1 extra, but very simple step).

Honestly, poundcakes are about my favourite cakes to bake! All you have to do is throw a bunch of ingredients in a bowl and then mix. There's little you can do to mess them up, and they always come out perfect.

By the way, if you have yet to buy yourself a kitchen scale, you must, must, must do it soon. So much easier than having to measure out quantities in measuring cups/jugs. Not saying you never have to use said items, but most of the time you can get away with just using a scale. Extra bonus: less items to wash up.

So to recap: if you are looking for a moist, lemony, not too dense cake with a tangy/sweet icing, this is the recipe for you.

Let's Bake!!
